Eat: A Week in Raw Food Dinners

Every once in a while I'll have someone ask me what raw foodies eat on a daily basis without making their lives super complicated. By "super complicated," I mean, when you don't have to dehydrate, prep-prep, sprout, and do all the usual things that might make a lot of raw dishes pretty time consuming. Here's almost a week's worth of dinners I made that all took less than 20 minutes to prep. And they were all deeeelicious and is generally what I make when I want to keep it relatively simple. Of course, it's usually paired with some fancier things like raw crackers and such. (I'll make large batches of those types of things over the weekend when I have more time.) I would give you the recipes... but as usual, these recipes are ideas that caught my fancy when I got to the kitchen counter to make dinner, and they were not written down because they're based off of intuition and whatever my little hands could find in the pantry and fridge. Eat: Best Meal Ever, Kelp Noodle Bowl

As Fall comes along and the weather gets colder, I tend to follow the "raw until dinner" rule pretty often. When I go for that option, the day is made up of fruit, green smoothies, and a few dehydrated goodies, and dinners tend to be any kind simple cooked veggies with the occasional tempeh. I've mentioned before that I tend to get a little bit obsessed with certain foods and eat them every day for a month until I move on to something new. This month, I figured why limit myself? So I took all of my favourite meals from over the past few months and put them into one. The result was this amazing  kelp noodle bowl that I created a couple days ago. It pieces together all my favourite cooked and raw foods all into one giant bowl of yummy. On top of a flavour and texture extravaganza, it's nutrition-packed, warming, and can be made in under 20 minutes. Pure deliciousness. Kelp Noodle Kale Salad

So, remember back in November when I got so obsessed with the deliciousness of collard wraps that I ate them for a month straight? Yep, well, I've found my March food obsession: massaged kale salad with kelp noodles. OMG. Aside from the fact that I'm now eating kale salads for dinner about 4 times a week, the addition of the kelp noodles just sent me over the moon. This dish pretty much has every nutrient under the sun. Kelp noodles are high in all sorts of minerals, while kale is one of the healthiest of the cruciferous greens. Including all the fixings, I can't think of anything it doesn't have! Of course, I don't have a full recipe for this, but just a mix of the things I always make it with. Here's to experimentation and kitchen intuition: Kelp Noodle Kale Salad Yield: 1 serving 1/2 to 3/4 head of kale 1/2 bag of kelp noodles 1/2 avocado 1/2 to 1 lemon salt and black pepper, to taste nutritional yeast onion powder tahini honey...

Raw on the Road: London and Toronto, take 2

Whether you're from there or just visiting, everyone knows that London is a pretty conservative town. Generally, conservative town = not super vegan friendly. Every time we go there, I tend to kind of forget about that, probably out of some sort of denial. However, if you know where to look, there are a fair number of organic and veg-friendly options. Especially if you choose to go the DIY route, their health food stores stock some very decent options: downtown London hosts the London Food Co-op , Wortley Village's Quarter Master Natural Foods , and the East End has Lyn-Dys (they are a bit pricier). Even more exciting, we discovered Organic Works ' new location, a mostly vegan and gluten-free bakery and cafe for all your yummy bread/baked good needs. We even got to meet the owner, Peter, who took us on a quick tour of the bakery! A foodie's dream come true! Pasta Two Ways

I think I've found love again, not since spirulina have I had such a love affair: kelp noodles. The only opportunity I've had to have them were during a number of visits to Java Green . What is there not to love? They're seaweed and they're like pasta! Two of my greatest loves. Problem is I've never been able to find them on my own in any grocery store anywhere... However, just yesterday, they were wonderfully gifted to me . I absolutely love their texture and they made my night! To celebrate what will be the first of many dinner dates with kelp noodles, I turned them into a super tasty raw jobche. Jobche (or japchae or chapchae) is a traditional Korean dish made from cellophane noodles (no, not actual cellophane, they're made out of some bean or yam starch) stir fried with sesame oil, soy sauce, sugar, and veggies typically including carrots, onions, spinach, and mushrooms. Understandably, Jobche actually means "mixed vegetables". So were mine... but...
